Weeknight Winter Soup to Warm You Up


Chop a cup of carrots, two zucchinis, and a cup of mushrooms. Chop four garlic cloves.


Drain a can of white beans.


Brown garlic in olive oil and add one pound (depending on how much you like) of Italian Sausage to the saucepan. 



Get a package of frozen spinach and fresh spinach ready. Cook a cup or so of whatever pasta you like, and put aside.


The recipe calls for two cans of beef broth.


Once you brown the garlic in olive oil and add the sausage, add one cup of water until the meat is cooked and broken up into small pieces. Add the beans, can of chopped tomatoes, two cans of beef broth, frozen spinach, mushrooms, and carrots to the saucepan and cook for about twenty minutes. Then add the zucchini and fresh spinach at the end and cook another ten  minutes. Finally, add the pasta to the soup.




This is a delicious, simple, and filling weeknight meal to warm you right up! My co-worker gave me this recipe, and since then, I've made it a few times. There's nothing like a bowl of homemade soup, candles burning, and a Sex and The City marathon to spice up your weeknight!
